So does anyone know of any good opensource linux DAWs/VSTs/etc.
I want to see what opensource has to offer in terms of music production.
I know of ardour, but I am not too sure what else there is.

The DAW isn't always the hub of a Linux audio system. Someone might live in Ableton or ProTools or Reason on a Mac or PC, but on Linux it's not so monolithic.
The Linux way is lots of little daemons and tools fitted together with a "glue"-- which is most often shell or Python or Perl in normal linux, and which is JACK in Linux audio. So you take lots of little softsynths and paste them together using JACK.
For example, I usuallly start with something simple like seq24, which is MIDI looper. Most of my stuff these days is "written" in that. For softsynths, I use fluidsynth (comand line version) and AMS and WhySynth and PHASEX and Specimen.
There are so many tools available, the best thing to do is just to try them. Since they are free, it costs you nothing to try all the tools, it's not like you have to pay for things before being able to use them.
