I think Jeff Buckley's cover of Leonard Cohen's "Hallelujah" is one.

I also really like the Clash's cover of "Pressure Drop." One of my favorite songs of all time.

Johnny Cash's best cover imo is "Long Black Veil." A great traditional song. Also, I'm pretty sure he didn't write "Cocaine Blues," but he kills that song on the Live from Folsom Prison album.

Oh boy, I sometimes listen to Samamidon's cover of Tears for Fear's "Head over heels" over and over.

locust did a marvelous, high camp cover of "Master and Servant" a few years back that I thought was light years ahead of the original
+2 mad world cover. Really love the original too though.

"Time is On My Side" - Irma Thomas. I'm aware that the Rolling Stones version is also a cover, but this version by Irma Thomas just kicks all ass.

Bongwater's cover of "you don't love me yet" and Big Brother and the Holding Company's version of "summertime". go Janis!

nina simone's version of "pirate jenny" from the 3-penny opera. it is dramatic and very chilling. the scariest
song i ever heard. much better than the original version which lacks the power that she gives it.
nina did lots of covers, all of them good. another fave is her cover of "just like tom thumb's blues" by dylan.
